Slow Food Embassy in Mallorca
Ca na Toneta is a lovely restaurant located in Caimari, a little town north of Mallorca, at the foot of Serra de Tramuntana. The place is run by María and Teresa Solivellas and it is a house with the typical last-century rural Mallorcan layout. The decor of the dining room is thought through, with simple, colourful and original elements that make it very cosy. The grapevine arbored terrace, the customers’ favourite area, particularly in summer season, stands out for its surrounding views and for the original mural that adorns it, a work by artist Albert Pinya.
Maria Solivellas, Ca Na Toneta chef, gives her own personal and simple view to the traditional Mallorcan recipes. Without delusions of grandeur, she applies to each product the right technique so that everything turns to be as it should, tasty. Her sister, Teresa Solivellas, is responsible for the pastry as well as for offering an efficient and friendly service.
At Ca na Toneta, the Solivellas sisters offer an attractive tasting menu that changes weekly, or more often, based on seasonal products organically grown in the home garden. Olive Oil, vinegar, jam and many other products are home-made in the traditional way. Everything served at Ca Na Toneta comes from nearby. They work side by side with small farmers, stockbreeders and fishermen of the area. They understand that there is a very close relationship between kitchen and land. This is why they try not to put miles on the table.
History of the Restaurant
The day before September 11th 2001, Maria Solivellas was going to New York to work as a music producer, her profession in Madrid and Barcelona before becoming a chef. The day after the terrible terrorist attack to the World Trade Center, she decided not to make life difficult for herself and stay peacefully in Mallorca for good, to go on working at Ca na Toneta, her mother´s restaurant, where she had been working during the summer. So, not only the fall of the twin towers was a turning point from the political, social and economic view but also from the gastronomic one; at least for María Solivellas.
All these years, this Mallorcan cook has sought to grow -at any cost- the authentic cuisine of the island, the real one. Always using the local and organic produce. Not surprisingly, then, Ca Na Toneta today is the true Slow Food Embassy in Mallorca.
